Tree of Life Nutrition was one of Brisbane’s first private practices, and has been operating since 1993. We operate our main clinic in Woolloongabba (South Brisbane) and offer additional clinics in various locations across Brisbane. We offer a range of nutrition and dietetic services from individual consults, to corporate and group seminars, menu analysis and more. These services are offered in person, or via telehealth.

Principal Dietitian & Nutritionist

Desi Carlos is the Principal Dietitian and Founder of Tree of Life Nutrition in Brisbane, established in 1993. Over her long career, Desi has helped thousands of patients eat well, feel good, and look great. Desi has a considerable depth of experience in helping patients solve their complex nutritional and dietary puzzles. This includes complex gastrointestinal disorders, women’s health and fertility and support for a range of chronic diseases and inflammatory conditions.
As a mother of three, and businesswoman Desi understands the pressures that our busy, modern lives can put on our diets and eating habits. She offers a wealth of practical, actionable and evidence-based nutrition advice for everyday enjoyment of food, health and life. You can hear Desi regularly sharing her expertise in the media; or read some of her many articles in a host of journals and magazines. She is also a regular guest speaker at a range of public nutritional events.
Desi’s special interest areas:
Desi has a Bachelor of Applied Science, majoring in Biochemistry and Microbiology and a Graduate Diploma in Nutrition and Dietetics. She has also completed the Microba Insights Course in gut microbiome health and is Monash University FODMAP Certified. She is passionate about research and application of gut and bowel health nutrition, women’s health and fertility, and chronic disease prevention and management, with a particular interest in the benefits of the scientifically-backed Mediterranean diet.

Eleni has a bachelor’s degree in Health Science majoring in Nutrition and a Bachelor of Nutrition and Dietetics and has over 10 years’ experience in the industry.
Eleni’s Greek heritage afforded a strong Mediterranean lifestyle which surrounded her by delicious food, embarking on a career based on food seemed only natural! Eleni is a strong believer in the power of food and is passionate about spreading this message to the wider community.
The emphasis placed on social outings and the time-poor nature of the community sometimes make it difficult to maintain a healthy balance however Eleni has a thorough understanding of the needs of today’s society and aims to steer away from fad diets and trends and instead promotes good, wholesome eating that can be tailored to each person’s needs to create sustainable nutrition choices.
Eleni is involved at a community level as well. She has written articles for the ABC, and local newsletters, performed cooking demonstrations at the Paniyiri Greek Festival, and has been a guest speaker and lecturer for Diabetes and Cardiovascular groups.

Eleni has a Bachelor of Nutrition and Dietetics, is registered as an Accredited Practising Dietitian and is a Nutrition Plus Certified Fertility Dietitian.
Growing up in a big Greek-Cypriot family, Eleni understands the important role food has in building connections, bringing people together and nourishing our bodies. She believes in a life free from restriction, where we can enjoy delicious food and feel amazing! Eleni is committed to tailoring nutrition advice to suit you, your family and lifestyle, to help build long-term foundational habits. Giving you the tools to feel great…for life!
Eleni strives to collaborate with all her clients to create realistic and personalised nutrition plans that flow with your busy schedule. Her strong communication and interpersonal skills help her to form real connections with people of all ages and backgrounds.
Specialist Interests: Fertility & Prenatal Nutrition
As a Fertility and Prenatal Dietitian, Eleni is passionate about helping women through their fertility, pregnancy, and postpartum journey. She utilises strong scientific evidence to provide women trying to fall pregnant with the most up to date information for:

- Restoring menstrual cyclicity
- Assisting with ovulatory disfunction
- Increasing implantation rate

Jade is an Accredited Exercise Physiologist who has completed a Bachelor degree in Sport and Exercise Science and a Master’s degree in Clinical Exercise Physiology. She is currently completing her PhD which investigates the effect that exercise performed during pregnancy has on the placenta.
Growing up playing a range of sports and spending much of her time outdoors, Jade saw her natural progression into an Exercise Science degree. It was then that she understood the important role that exercise can play in a person’s wellbeing. Through her experiences working with a range of clientele, Jade developed a desire to help others achieve their goals and assist them in managing any chronic conditions on their journey towards a healthy lifestyle.
Jade has a keen interest in the areas of women’s health and cardiometabolic conditions and believes in the philosophy that exercise is medicine. She aims to use her knowledge to educate and empower others through exercise.
In her spare time, you’ll find Jade either at the gym or playing tennis on her local court.
Mette Parkinson Gilligan
BSc (Sport Psych/HMS) Hons (Psych) MPsych (Sport & Exercise)
Mette is a Registered Psychologist with 16 years of experience with a special interest in the areas of well-being, relationships, self-esteem/confidence, stress, depression and anxiety management. Her wide experience and interest areas make Mette a perfect addition to the Tree of Life team, as does her warm, non-judgemental approach. She is dedicated to providing a safe space for clients to be heard.
Mette operates within Cognitive Behaviour Therapy (CBT), Interpersonal Therapy, and Acceptance Commitment Therapy (ACT) frameworks in order to help clients to improve their well-being and achieve their therapeutic goals.
She is a member of the Australian Association of Psychologists Inc (AAPi), and also provides services to the Australian Institute of Sport Mental Health Referral Network, AFL Players Association, and Australian Cricketers Association, supporting athletes and their families.

Mette is a Registered Psychologist with a Masters in Sport and Exercise Psychology. She has worked with a range of clients in this space, including elite athletes. She currently provides consulting services to the Australian Institue of Sport (AIS) Mental Health Referral Network (MHRN), Australian Football League Players Association (AFLPA), the Australian Cricketers Association (ACA), and the Queensland Jockeys’ Association (QJA). She specialises in the mental health and wellbeing of athletes and their families, as well as managing return from injury.
Mette has extensive experience working in Employee Assistance Program (EAP) delivery, spending the last 8 years working with one of the largest EAP providers in Australia. She has recently been selected for the role of onsite Wellbeing Psychologist for a large government department and a multi-national corporation. She provides individual consultations, assists managers, and delivers workshops and training. Mette also provides Critical Incident Debriefing to support clients experiencing trauma. She also currently holds an ongoing position as an educator with the Australian College of Applied Psychology (ACAP).
Zoe has always been drawn to helping people and had a keen interest in the healthcare system. Growing up in a Greek family, Zoe has always understood the importance food has in bringing people together and forming connections. She has an interest in facilitating tailored and holistic healthcare, which initially drew her to Allied Health. In turn, Zoe is currently studying a Bachelor of Health Science (Nutrition) with a provisional entry into the Masters of Dietetics at the University of Queensland.
With over 5 years’ experience working within Tree of Life Nutrition, Zoe oversees all our operations with passion, attention to detail, and efficiency. She understands how daunting it is to take your first steps in bettering your overall wellness, and she aims to ease this by providing optimal patient-centred care by putting equality, respect, and dedication at the forefront.
