Unlike your traditional hot cross buns, our recipe for Unrefined Hot Cross Buns gives a nice crunch to the exterior yet leaves a soft, fluffy centre. We’ve removed the refined sugar so you can enjoy these bad boys without the guilt this Easter!
Unrefined Hot Cross Buns Recipe
Ingredients
Buns:
- 250g wholemeal flour
- 2tsp cinnamon
- 1 tsp ground ginger
- ½ tsp baking soda
- 1 tsp baking powder
- ½ cup almond milk
- 2 tbsp coconut oil
- 2 eggs (one for glaze)
- 1 tsp vanilla extract
- 1 tsp lemon juice
- 2 tbsp raw honey
Cross:
- 1 tbsp coconut oil
- 1 tbsp cacao powder
Method:
- Pre-heat oven to 160° celcius and line a baking tray with baking paper
- Combine all dry ingredients into a medium bowl and mix well
- In a separate bowl, whisk almond milk, coconut oil, 1 egg, vanilla extract, lemon juice and honey until combined and slightly aerated
- Fold the wet ingredients into the dry until combined (mixture will be quite moist)
- Separate the mixture into 8 equal bun portions and place onto the baking tray
- Briefly beat the second egg and lightly coat the individual buns
- For the cross, combine the coconut oil and cacao powder until a paste forms. Dip a knife into the mixture and “paint” the cross onto each bun
- Bake for 20 minutes
