Homemade Tzatziki
Ingredients
- 500g low fat natural Greek yoghurt
- 2 x cucumbers
- 2 x garlic cloves (average size)
- ¾ tbs extra virgin olive oil
- 1 tsp balsamic vinegar
- Salt (to taste)
Method
- Place Greek yoghurt into a fine sieve resting over a bowl for 4 hours to allow excess liquid to drain
- Peel the two cucumbers then slice down the middle and remove seeds with a teaspoon. Grate then queeze out as much moisture as possible
- Peel and crush garlic then combine with yoghurt and cucumber
- Stir in olive oil and balsamic then season with salt, depending on personal taste
